ELABORATION
Grapes from our vineyard in Carbonera, the highest altitude vineyard in the entire D.O.Ca. Rioja (840 m). After a brief cold maceration, the grapes are gently pressed at low temperature. The must is protected at all times from oxidation by carbon dioxide snow. Racking at low temperature.
The musts are fermented in small tanks at low temperatures (16 ºC) to achieve the maximum aromatic potential of each variety, enhancing the thiol aromas in the case of Sauvignon Blanc. After alcoholic fermentation, the wine is left on fine lees for a month, which gives it a special smoothness.
TASTING NOTES
This white wine has a greenish-yellow colour and aromas of boxwood, typical of Sauvignon Blanc grapes grown in cold areas. In addition, other hints of citrus and tropical fruit notes can also be distinguished. On the palate, it is refreshing and very smooth with a long aftertaste.
PAIRING
It is a good accompaniment to seafood dishes, rice dishes, fish and pasta. The ideal serving temperature is between 7 and 8 °C (45-47 °F).
