ELABORATION
VARIETY
Chardonnay from Finca Carbonera, a plantation located at a maximum altitude of 875 metres. The vineyard sits on a glacis, with a large accumulation of stones on the surface, which promotes the health and ripening of the grapes.
ELABORATION
The Chardonnay grapes are destemmed, cold macerated and gently pressed in the winery located in the centre of the estate, avoiding contact with oxygen in all pre-fermentation operations. Alcoholic fermentation takes place in stainless steel tanks at a temperature of 16ºC to extract the full aromatic potential of the variety.
This Chardonnay wine is aged for 12 months in new French oak barrels (steamed), where periodic stirring of the fine lees (battonage) is carried out, more intensely at the beginning of the ageing process, to maintain the fruitiness of the wine and enhance its complexity, smoothness and longevity. After ageing in barrels, it remains in the bottle for a minimum of 12 months, where it acquires its characteristic bouquet.
TASTING NOTES
Respecting the fruity and floral aromas of the Chardonnay variety, ageing on fine lees in barrels, together with the characteristic freshness of the high-altitude vineyard at Finca Carbonera, brings an extraordinary and persistent smoothness and aromatic complexity, combining notes of orange blossom and honey with a delicate aroma of vanilla.
PAIRING
Although it is not common to pair white wines with red meats, this Chardonnay wine is a good accompaniment to game dishes, red meats and beef. The ideal serving temperature for this type of wine is between 16 and 18 ºC (60.8-64.4ºF).
