ELABORATION
The grapes used to make this red wine are harvested in 350 kg crates to preserve them until they arrive at the winery, where they are sorted on a selection table. Maceration and alcoholic fermentation take place in small 100 Hl stainless steel tanks, with daily pumping over and a long maceration period. Malolactic fermentation takes place in barrels. For ageing, we have selected several types of barrels from different origins, toasts and coopers, which has undoubtedly contributed to the complexity of the wine. The total ageing in barrel is 24 months. It is then refined in the bottle for a minimum of 18 months before being released onto the market.
TASTING NOTES
This is a Rioja Reserva red wine with a deep cherry red colour. It also has hints of mocha and coffee that complement the aroma of red forest fruits. In short, this is a silky, dense wine on the palate with a long finish.
PAIRING
Coto Real Reserva pairs well with game, duck breast, pigeon, and of course all red meats. The recommended serving temperature is between 16 and 18 ºC (60.8-64.4ºF).
