VARIETY
Sauvignon Blanc. El Coto Blanco Seleccion Viñedos is made with grapes from our vineyard in Carbonera, the highest altitude vineyard in the entire D.O.Ca. Rioja (840 m).
ELABORATION
After a brief cold maceration, the grapes are gently pressed at low temperature. Settling is also carried out at low temperature, as is fermentation (at 16ºC), in order to achieve the maximum aromatic potential of this variety, enhancing the thiol aromas of Sauvignon Blanc. In addition, a suspension of fine lees is applied for a month, which gives it a special smoothness.
TASTING NOTES
This is a greenish-yellow Sauvignon Blanc with aromas of boxwood typical of this variety grown in cold areas. Tropical fruits combined with citrus notes are also apparent. On the palate, it is refreshing and smooth with a long finish.
PAIRING
This Rioja white wine is perfect for accompanying seafood, rice dishes, fish and pasta. The ideal serving temperature is between 7 and 8 °C (45-47 °F).
