VARIETY
Chardonnay. This white wine comes from our Carbonera Estate, a Chardonnay plantation located at a maximum altitude of 875 metres. The vineyard sits on a glacis, with a large accumulation of stones on the surface, which promotes the health and ripening of the grapes.
ELABORATION
The Chardonnay grapes are destemmed, cold macerated and gently pressed in the winery located in the centre of the estate, avoiding contact with oxygen in all pre-fermentation operations. Alcoholic fermentation takes place at a temperature of 16ºC to extract the full aromatic potential of the variety. New French oak barrels that have not been toasted (steam-treated) are used in the alcoholic fermentation process. Once fermentation is complete, the lees are periodically stirred (battonage) to maintain the wine’s fruitiness and enhance its complexity, smoothness and longevity.
TASTING NOTES
This is a barrel-fermented white wine that respects the fruity and floral aromas of the Chardonnay grape. In addition, barrel fermentation adds a marked smoothness and aromatic complexity, combining notes of tropical fruit (pineapple) with a delicate vanilla aroma. The origin and treatment of the French oak chosen fully respect the delicacy and finesse of this variety.
PAIRING
This Chardonnay white wine is perfect for fish stews, rice dishes, foie gras, oily fish such as salmon, or seafood. The ideal serving temperature is between 10 and 12 ºC.
